Description: Shui Xian, or “Water Sprite,” is a highly oxidized, high-fired oolong from the northern Fujian province in the Wuyi Mountains of China. This region is known for its steep cliffs, sediment-rich soil, and long history of crafting dark oolongs in the traditional twisted leaf style.

Grown at elevations over 2,600 feet, this tea brews a rich-tasting, amber-colored cup with layered notes of minerals, peach, apricot, and warm spice.

Smooth and satisfying, Shui Xian is a staff favorite and an excellent choice for an everyday oolong. Its depth and balance make it ideal for multiple infusions. .

This tea also makes an incredible iced tea — recommended for those who enjoy iced oolongs as well as drinkers of traditional black iced teas.

Ingredients: organic oolong tea from the Wuyi Mountains of China

Steep Directions: steep 1 heaping teaspoon of tea per 8 oz below boiling water, 195°F, for 3-4 minutes

I was surprised by how the minerality balances the honey sweetness—it’s not cloying at all. The dry leaves have a toasty, almost smoky scent that makes me look forward to each steep. Perfect for slow sipping on a quiet afternoon.

That apricot and honey finish lingers beautifully after each sip, and the mineral backbone keeps it from being too sweet. It's quickly become my go-to afternoon tea.

I've been drinking Wuyi oolongs for years and this Shui Xian holds its own, especially for the price. The high firing comes through as a nice toasty edge that rounds out the peach and mineral finish. Third steep is where it really opens up.
